gewöhnlicherweise verwendet man ein zufällige Sortierung und nimmt dann nur den ersten Satz (falls die Syntax fehlerhaft ist, bitte gerade LIMIT und RAND selber nachschlagen).
SELECT name
FROM table
ORDER BY RAND()
LIMIT 1
