Okay.
Online einloggen kann ich mich nicht direkt bei GoogleMail sondern über
https://www.google.com/a/example.com/
Ich habe also mal eine normale googlemail addy in die sasl_passwd gepackt, per postmap danach neu gehashed, postfix restartet und siehe da, ich habe zwar keine E-Mail bekommen, aber wieder eine Meldung:

Dann habe ich die Datei mail.log wieder auf 0 Bytes gesetzt und es nochmal probiert...
